Enchilada Recipes - Authentic New Mexico Food and More

If you're anything like me, you can't get enough good enchilada recipes. There's just something about this versatile dish that seems to encompass the spirit of authentic Mexican food, perhaps more than any other.

Just think about it: There are chicken enchilada recipes, as well as ones that include beef, pork, shrimp and other seafood. There are ones with no meat at all, but with a wide assortment of different cheeses. Some vegetarian enchilada recipes forgo the meat and cheese altogether, although admittedly, these wouldn't be included among my all-time favorites. (No offense to you strict vegetarians, but to me, a true, authentic plate of enchiladas has got to have a healthy portion of cheese, at the very least.)

And then, there's all the other possible fillings and toppings: red and green sauce, and the many variations upon those (can you say chicken enchiladas suizas?) There's sour cream, and ripe (black) olives, cilantro and avocado - I'm getting very hungry right about now, and I'm only scratching the surface - how about you?

Anyway, I think you're beginning to see that if you're looking for great enchilada recipes, you've come to the right place. Now, a word of caution: I'm a bit of a Mexican food snob, admittedly - I grew up in Las Cruces, New Mexico, and consider it (along with many friends and family members) the Mexican food capital of the world. To me, Mexican food from other parts pales by comparison - but maybe you don't agree! Well, my blog is now up on this site, so don't be shy to post your comments, and even your own enchilada recipes. Together, we'll have some fun, share some great recipes, and hopefully discover some great Mexican food together.

By the way, here's a cookbook with some great enchilada recipes, and quite a few other very good Mexican food recipes. I haven't tried all of them (yet!) and obviously, there's a lot more here than just enchiladas, but I've seen enough to give it a "thumbs up." If you decide to try it, please let me know what you think - you can access my blog by clicking on the link above. Thanks in advance!
